Chicken Bok Choy Soup


3 chicken breasts (Hoffman Certified Organics)

Green onions (Fishburn Farms)

Bok Choy (Hawkins Family Farm) – 3 small heads

Carrots (Berry Hill Farms, Hawkins Family Farm)

Garlic tops (Berry Hill Farm)

Fresh parsley (Country Garden Farm Market)

Fresco Spices (Herbs and Chives, Fresco Grille) or any combo you prefer


Diced tomatoes – fresh from Master Plan Farms (or canned)

Organic Chicken broth (Hoffman Certified Organics) or Vegetable broth




Boil cubed chicken breasts in water with spices in large soup pot until done.  In the meantime, chop all other ingredients and set aside.  Once chicken is done, add all other ingredients to the pot, along with 32 oz. container of vegetable or chicken broth.  Simmer until vegetables are tender.  While the soup is cooking, prepare rice.  (I used organic brown rice).  Put rice in bowl and ladle the soup over.
